This is one of our favorite places on earth.

Kevin and I honeymooned here.
We stayed at an incredible rustic cabin
that some dear friends own.
We hiked, played in waterfalls,
ate great food, and looked at gorgeous views
like this one all. day. long.
Ahhhhh......

We've started a family tradition of
coming here to cut down our Christmas tree.
It's a wonderful day trip,
topped off with lunch at a
great local BBQ joint.
And if you want breath-taking leaf views
in the fall,
this is your place.
Actually, it's beautiful any time of the year.
And it's a laid back, charming little town to boot.
Guess what?
We going there this weekend!
I cannot wait for some R&R with family
and good friends.
It will do my soul well.

Speaking of chillin' in the mountains,
Ray LaMontagne is one of my go-to artists
when I want to listen to something mellow.
(La Montagne means "mountain" in French--
see how I did that?)
His voice is so smooth, he could sing
heavy metal and make it sound relaxing.

Here's an idea for a simple dinner (or lunch):
Open face Caprese Sandwiches.
Start with some good Italian bread and fresh tomatoes.
These are a mixture of 'Sungold', 'Campari' and 'Black Cherry' tomatoes.
Aren't they lovely?
Add fresh basil leaves.
Top with slices of fresh mozzarella
and balsamic vinaigrette.
But not just any balsamic vinaigrette.
THIS balsamic vinaigrette.
(My friend Susan gave me this recipe years ago.
I've been ruined on store-bought bottles ever since.)
Trust me, take an extra 5 minutes and make this.
It will rock your salad dressing world!
Use a pint size jar and add
3/4 cup balsamic vinegar,
1 clove minced fresh garlic,
the juice of 1/2 lemon,
a generous squirt of spicy mustard,
two or three shakes of worcestershire,
several shakes (or grinds) of salt and pepper,
and a healthy pinch of Herbes de Provence
(it's worth your while to have this in your spice rack
for this recipe alone).
Add olive oil to reach 2 cups.
Seal lid and shake vigorously.
Can you tell that Susan didn't give me measurements,
just ingredients? :)
You can play with it until it tastes right to you.
If you make it,
let me know what you think...
Back to the sandwiches-
I like to pop them under the broiler for a minute
to melt the cheese slightly,
though you can definitely skip this step.
The perfect quick meal in the mountains
or wherever you are. :)

Came over from Farmgirl Paints and so glad I did! That spot looks wonderful and is so pretty! And the sandwhiches...one of my all time favorites. I am going to give the vinagrette a try tonight. Sounds like a yummy keeper!

ReplyDeleteHope you guys are having fun this weekend....we LOVE Chashiers, too!!! We used to go hiking there often...there are beautiful waterfalls there...I bet we've played in some of the same ones and didn't even know it!
